Lemon Loaf with Strawberry Glaze

Perfect Spring/Summer Cake

This loaf is the perfect spring/summer dessert. It isn’t overly sweet, and you get the freshness from the lemon and strawberries. If you love anything lemon, you will love this.

The texture is super fluffy, you would never know this recipe is vegan. The glaze is completely optional, but I find the lemon and strawberry work well together.

  • Vegan butter: any vegan butter will work. You can also try liquid oil or normal butter if you aren’t vegan.

  • Sugar: I like to use coconut sugar as it is refined sugar free. Any granulated sugar will work such as monk fruit or white sugar.

  • Applesauce: I always use unsweetened applesauce. Ideally, you want the only ingredients to be water and apples. You can use sweetened applesauce; however, I find it to be sweet enough using unsweetened applesauce.

  • Nondairy Milk: I always use unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan, traditional milk should also work.

  • Lemon juice: I like using fresh lemon juice in this recipe. If you don’t have that, you could also use lemon extract. I would recommend 1-3 teaspoons depending how strong you want the flavor to be.

  • All-purpose flour: I haven’t tested any other flours in this recipe.

  • Almond flour: I haven’t tested any other flours in this recipe.

  • Strawberries: I used fresh strawberries; you could also use frozen.

  • Powdered sugar: you can use any powdered sugar you prefer or swap the glaze with frosting instead.

 Ingredients:

  • Vegan butter

  • Sugar

  • Applesauce

  • Nondairy Milk

  • Lemon juice

  • Baking powder

  • All-purpose flour

  • Almond flour

  • Strawberries

  • Powdered sugar

Recipe:

  • 6 tablespoons vegan butter

  • 2/3 cup sugar

  • 2/3 cup applesauce

  • ¼ cup nondairy milk

  • ¼ cup lemon juice (can do more for stronger flavor)

  • 2 teaspoons baking powder

  • 1 1/3 cup all-purpose flour

  • ½ cup almond flour

Glaze:

  • ¼-1/3 cup mashed strawberries

  • ½-3/4 cup powdered sugar

  • Optional: 3 tablespoons lemon juice

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit. Spray a loaf pan with cooking spray or use parchment paper. Set aside.

2. In a small bowl, melt your butter. Once melted transfer to a large bowl and add in the sugar, applesauce, lemon juice, and almond milk. Stir well to combine.

3. Add in the baking powder, all-purpose flour, and almond flour. Stir until a batter forms and there are no clumps.

4. Transfer to baking pan and bake for 45 minutes.

5. Once done baking allow to completely cool (about 30-40 minutes).

6. For the glaze, mash the strawberries. You may need to microwave them so it’s easier to mash. Once mashed add in the powdered sugar and lemon juice if using.

7. Pour glaze evenly onto loaf, enjoy! Optional: top with a lemon slice.

Be sure to store the loaf in an airtight container in the refrigerator. The loaf should last up to one week. You can store in the freezer to last longer.
