Lemon Protein Cookies

No-Bake, Protein Packed Cookies

If you love lemon flavored things but are looking for ways to add more protein to your diet, you have to try these cookies.

Everything is made in one bowl and takes less than 10 minutes. The ingredients are on the healthier side so these cookies could even be eaten for breakfast. Otherwise, they make the perfect snack or dessert.

If you want, you could also add fruit to these. Any berries would work well in this recipe. Let me know any combinations you try!

Applesauce: I always use unsweetened applesauce. Ideally, you want the only ingredients to be water and apples. You can use sweetened applesauce; however, I find it to be sweet enough using unsweetened applesauce.

Sugar: I like to use coconut sugar as it is refined sugar free. Any granulated sugar will work such as monk fruit or white sugar.

Nondairy milk: I always use unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan, traditional milk should also work.

Lemon juice: I like using fresh lemon juice in this recipe. If you don’t have that, you could also use lemon extract. I would recommend 1-3 teaspoons depending how strong you want the flavor to be.

Coconut flour: if you don’t prefer to not use coconut flour, you could use more protein powder or almond flour in place of it.

Almond flour: if you prefer to not use almond flour, you could use more protein powder or coconut flour in place of it.

Protein powder: I used a plant-based vanilla protein for this recipe. Any flavor will work. I haven’t tried any whey proteins.

Optional: cacao butter for topping: I used cacao butter to keep the recipe lower in sugar. You could also make a powdered sugar glaze, add frosting, or leave the cookies as is.

Ingredients:

  • Applesauce

  • Sugar

  • Nondairy milk

  • Lemon juice

  • Coconut flour

  • Almond flour

  • Protein powder

  • Optional: cacao butter for topping

Recipe:

  • 1/3 cup applesauce

  • ¼ cup sugar

  • 2 tablespoons nondairy milk

  • ¼ cup lemon juice

  • ¼ cup coconut flour

  • 2/3 cup almond flour

  • 1/3 cup protein powder

Directions:

1.    In a bowl combine the applesauce, sugar, nondairy milk, and lemon juice. Stir to combine.

2.    Add in the coconut flour, almond flour, and protein powder. Stir until a dough is formed. If the dough looks too dry, add more milk.

3.    Use a cookie scoop to scoop the dough. Roll into a ball and press flat. Place on a plate or in a container.

4.    Repeat onto all the dough is used.

5.    Place in the refrigerator for 1 hour. If topping with cacao butter, melt it first then coat each cookie in it.

Be sure to store the cookies in an airtight container in the refrigerator. The cookies should last up to one week. You can store in the freezer to last longer.

Iced Oatmeal Chocolate Chip Cookies
