Cookies Packed with Protein

If you are someone who is looking to add extra protein into your diet, look no further. These protein cookies are the perfect snack, dessert, or breakfast. I love how they are no-bake and take only 5 minutes to make. The longest part is waiting for the chocolate to harden.

When picking a protein powder, I always try to use one with simple ingredients. If you are someone who finds that when consuming protein powder it makes you feel sick, try finding one with simpler ingredients. It’s really important to check the ingredients list of protein powder as so many brands add tons of unhealthy ingredients that can also affect your gut health.

There are countless different combinations you can make with the base of this recipe. Some of my favorites include:

Cinnamon sugar: use all the same ingredients except the sprinkles. Add in ½ teaspoon of cinnamon and coat them in a cinnamon sugar mixture.

Macadamia white chocolate: use all the same ingredients except the sprinkles. Fold in chopped macadamia nuts and white chocolate chips.

Double chocolate cookie dough: switch the vanilla protein for chocolate protein powder. Replace the sprinkles with chocolate chips.

PB&J: use peanut butter instead of almond butter. Replace the sprinkles with blueberries or fruit of choice.

Almond butter: any nut or seed butter will work (cashew, sunflower, peanut, etc.) Make sure whichever you choose to use is creamy and not super thick.

Sugar: you can use any sugar of your choice. Make sure to use GRANLUATED sugar (brown, white, etc.) Liquid sweetener will NOT work.

Protein powder: any protein powder will work. I used a plant-based vanilla one and would recommend using vanilla.

Sprinkles: any sprinkles will work. If you don’t want the sprinkles, you can also omit them and add something else or leave as is.

Chocolate: any chocolate will work. You can use chocolate chips or chop a chocolate bar. You can also use white chocolate.

 Ingredients:

  • Almond butter

  • Applesauce

  • Sugar

  • Protein powder

  • Sprinkles

  • Chocolate

Recipe:

  • 1/3 cup almond butter

  • ½ cup applesauce

  • ¼ cup sugar

  • ¾ cup protein powder

  • 1/3 cup sprinkles

  • 1 cup chocolate (melted)

Directions:

1.    In a bowl combine the almond butter, applesauce, and sugar.

2.    Add in the protein powder.

3.    Stir until a dough is formed.

4.    Fold in the sprinkles.

5.    Use a tablespoon measuring spoon to scoop the dough.

6.    Repeat and press each ball of dough into a cookie shape.

7.    Allow to set in the freezer for 10 minutes.

8.    After the 10 minutes, melt your chocolate.

9.    Dip each cookie into the chocolate.

10. Optional: top each cookie with extra sprinkles.

11. Allow the chocolate to harden for 15 minutes in the freezer.

 

Store these in an airtight container in the refrigerator. They will last up to 5 days in the refrigerator. If you want them to last longer, store them in the freezer. Allow to thaw for 10 minutes before eating.
