Delicious Banana Flavor

One of my all-time favorite desserts is banana bread. This recipe is a little twist on banana bread and might taste even better. I added my Homemade Healthy Chocolate Frosting on top and this recipe turned out amazing!

This recipe is dairy-free, egg-free, and can easily be nut-free. It’s also super simple and quick to make. Everything is mixed in one bowl.

I love that this recipe only has ¼ cup added sugar. A lot of the sweetness comes from the bananas. That is why this recipe is super good for dessert, but also can be eaten as a breakfast or snack.

You can also add in walnuts, cinnamon, or chocolate chips to this cake if you want. Its super versatile and can be customized to your preference.

In this recipe I used a mix of oat flour and all-purpose flour. If you’ve never baked with oat flour, its super simple to make. I typically make it in big batches, by just adding either rolled oats or quick oats to my blender. Make sure to blend until a fine flour is formed. Making oat flour at home is a lot cheaper than buying it at the store.

Maple syrup: you can use any liquid sweetener of choice (agave, date syrup, etc.) Make sure it is LIQUID and not granulated.

Almond butter: any nut or seed butter will work (cashew, peanut, sunflower, etc.)

Banana: make sure your bananas are ripe. A lot of the sweetness in this recipe comes from the banana.

TIP: if you want to make this recipe and you don’t have ripe bananas, just put them in the oven. Preheat your oven to 325 degrees Fahrenheit and place the bananas on a cookie sheet. Be sure to watch them carefully. Once they turn brown, they will come out super ripe and ready to be used in baking.

When mashing the bananas, I always just use a fork. I find this to be the easiest way to do it. Also, I leave some chunks of banana, this is optional and obviously up to your preference. I find it tastes super good like this!

 Ingredients:

  • Banana

  • Maple syrup

  • Applesauce

  • Almond butter

  • Baking powder

  • All-purpose flour

  • Oat flour

Recipe:

  • 2 bananas

  • ¼ cup maple syrup

  • 1/3 cup applesauce

  • ¼ cup almond butter

  • 2 teaspoons baking powder

  • ¼ cup all-purpose flour

  • ¼ cup oat flour

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit.

2.    Line a 9x5 baking pan with parchment paper or spray with cooking spray.

3.    In a large bowl, mash your bananas.

4.    Add in the maple syrup, applesauce, and almond butter.

5.    Stir until combined.

6.    Add in the baking powder, oat flour, and all-purpose flour.

7.    Stir until a batter forms.

8.    Pour into the baking pan and bake for 30-35 minutes.

9.    Once cooled, I added my Healthy Chocolate Frosting this is optional.

Be sure to store the banana cake in the refrigerator. It will last up to 5 days in the refrigerator. If you want it to last longer, store in the freezer and allow to thaw before consuming.
