Oreo Caramel Chocolate Cookie Dough Bars

No-Bake Dessert Made with Healthier Ingredients

My all-time favorite recipes are no-bake recipes that combine my favorite sweets. This recipe does just that. Oreos, caramel, and cookie dough are some of my favorite dessert combinations.

While this recipe sounds super indulgent it’s made with a lot healthier and simple ingredients.

Coconut sugar: I like using coconut sugar to keep the recipe refined sugar free. However, you can use any type of granulated sweetener such as white sugar, stevia, or monk fruit. Using a liquid sweetener like maple syrup will change the outcome of the recipe.

Applesauce: I always use unsweetened applesauce. You ideally want to find an applesauce where the only ingredients are apples and water. If you want you can use a sweetened kind, however, I find the recipe is sweet enough. If you don’t want to use applesauce, mashed banana should also work.

Cashew butter: I like using cashew butter in this recipe for the taste. However, any type of nut or seed butter will work. Be sure it is on the runnier side rather than chunky.

Protein powder: I used a plant-based vanilla protein powder. I haven’t tested any other protein powders in this recipe. Most protein powders should work, just add slowly and mix as you go.

Chocolate chips: any chocolate chips will work. I always switch up the brand I purchase and typically get them from Amazon.

Dates: the dates act as the “caramel” in this recipe. If you’ve never had a date, they do have a slight caramel taste while being a much healthier alternative.

Oreos: you can use any type of cookie you want, or you can leave these out.

Ingredients:

  • Coconut sugar

  • Applesauce

  • Cashew butter

  • Protein powder

  • Chocolate chips

  • Dates

  • Oreos

Recipe:

Cookie dough:

  • ¼ cup coconut sugar

  • 1/3 cup applesauce

  • ½ cup cashew butter

  • 2 scoops protein powder (about 26g for one scoop)

  • ½ cup chocolate chips

Caramel:

  • 8-10 dates

  • 2-4 tablespoons water

Top:

  • 5-7 Oreos

  • 1 cup melted chocolate

Directions:

1.    Line a baking pan with parchment paper or spray with cooking spray.

2.    Add the dates to a bowl and cover in hot water. Set aside.

3.    In a separate bowl add the coconut sugar, applesauce, and cashew butter. Stir well.

4.    Add in the protein powder and stir until a dough is formed. Fold in the chocolate chips. Transfer this mixture to the baking pan and press down.

5.    Drain all the water from the dates besides about 2-4 tablespoons. Using a fork to mash the dates into a paste. Add this paste on top of the cookie dough. Spread evenly. Add the Oreos on top of this.

6.    Place in the freezer for an hour. After the hour, melt the chocolate and add on top. Place back in the freezer to allow the chocolate to harden. This should take about another 30 minutes – 1 hour.
