Chocolate Sprinkle Cookie Dough Bites

No-Bake Holiday Treat

No-bake recipes are my absolute favorite to make because they can be customized to whatever your preferences are. You can add whatever you want to the dough, can top with whatever toppings you want, and coat the bites in whatever chocolate you want.

Also, switching up the protein powder flavors will change the outcome each time. You could also add peppermint extract for a minty taste. Another option would be to substitute some of the almond flour for cacao powder to make the cookie dough chocolate.

This recipe is the perfect thing to prep for the week and have on hand as a snack. The protein powder helps to keep you fuller for longer. The almond butter and almond flour also add healthy fats. If you want to lower the sugar in these, you can use sugar-free chocolate, add no chocolate at all, or omit the sugar/use a zero-calorie sweetener.

 Protein powder: I used a vanilla flavored protein powder. You can use any flavor you want. If you don’t want to use protein powder, you could use coconut flour or more almond flour. The measurements will be DIFFERENT. Add slowly and mix as you go.

Almond butter: any nut butter will work. I would recommend sticking with almond butter, cashew butter, or sunflower seed butter.

Sugar: I used coconut sugar to keep this refined sugar free. You can use any granulated sugar of your choice (white, brown, stevia, etc.) Liquid sweetener such as maple syrup will NOT work.

Applesauce: I always use unsweetened applesauce. If you don’t want to use applesauce you could use pumpkin puree, mashed banana, or liquid oil. I wouldn’t recommend subsisting the applesauce though as these substitutions do make the recipe turn out slightly different.

Chocolate: I used vegan chocolate chips to add to the cookie dough. You can use any chocolate chips or chop a chocolate bar.

White chocolate: vegan white chocolate can be hard to find. I always buy mine on Amazon.

Ingredients:

  • Almond butter

  • Sugar

  • Applesauce

  • Almond flour

  • Protein powder

  • Chocolate

  • Sprinkles

Recipe:

  • ½ cup almond butter

  • 1/3 cup sugar

  • 1/3 cup applesauce

  • ¾ cup almond flour

  • ¾ cup protein powder

  • 1 cup white chocolate

  • ½ cup chocolate chips

Directions:

1.    In a bowl combine the almond butter, sugar, and applesauce.

2.    Add in the almond flour and protein powder. Stir until a dough is formed. Fold in the chocolate chips.

3.    Use a cookie scoop or spoon and scoop the dough. Roll each bite into a ball shape. Once all the dough is rolled, place in the refrigerator for 1 hour.

4.    After the hour, melt the white chocolate. Coat each bite into the white chocolate and top with sprinkles or whatever topping you want.

Be sure to store the bites in the refrigerator or freezer. The bites should last up to 5 days in the refrigerator. You can prep a large batch and store in the freezer. It should last for a month minimum. I prefer storing mine in the freezer for a cookie dough ice cream type dessert.
