No-Bake Sugar Cookie Bites

Sugar cookies are the star of the holiday season. However, sugar cookies can take a lot of time to make so, if you’re craving the taste but not the time you have to make these. The truffles are no-bake, so no cooking is required. Also, everything is combined in one bowl so it’s an easy clean up.

TIP: add ½ teaspoon of oil to the white chocolate before placing in the microwave. The oil helps the chocolate to melt smoother and therefore is easier to work with.

Applesauce: I use unsweetened applesauce. You can use whatever applesauce you want. If you want to substitute, you could use oil, mashed banana, or pumpkin puree. All of these will make the truffles turn out slightly different so, if possible, I wouldn’t recommend substituting the applesauce.

Vegan cream cheese: I used plain cream cheese. If you aren’t vegan, you can use normal cream cheese.

Vegan yogurt: I used plain unsweetened cashew yogurt. Any yogurt will work, vegan or not.

Sugar: any granulated sugar will work. Be sure it is granulated and not a liquid sweetener such as maple syrup.

Protein powder: I used vanilla protein powder. Any flavor will work. If you don’t want to use protein powder, you could also use almond flour or coconut flour. The measurements will be DIFFERENT. Add slowly until you reach a dough consistency.

White chocolate: I buy my vegan white chocolate on Amazon. Any white chocolate will work you can also use normal chocolate

Sprinkles: you can top with sprinkles, crushed candy cane, drizzle with more chocolate, etc.

Another delicious variation of this is a double chocolate truffle. The base of the recipe is the same, and then you add 1-2 tablespoons of cacao powder. I also coated mine in normal chocolate.

Ingredients:

  • Applesauce

  • Vegan cream cheese

  • Vegan yogurt

  • Vanilla extract

  • Sugar

  • Protein powder

  • White chocolate

  • Sprinkles

Recipe:

  • ½ cup applesauce

  • 3 tablespoons vegan cream cheese

  • ¼ cup vegan yogurt

  • 1 teaspoon vanilla extract

  • ¼ cup sugar

  • 2/3 cup protein powder

  • 1 cup white chocolate

  • Sprinkles (as many as you want)

Directions:

1.    In a bowl combine the applesauce, vegan cream cheese, vegan yogurt, vanilla extract, and sugar.

2.    Add in the protein powder and stir until a dough is formed. Fold in the sprinkles.

3.    Scoop the dough and roll into balls. Let set in the refrigerator for 30 minutes.

4.    After the 30 minutes, coat each bite in white chocolate and sprinkles.

Be sure to store the truffles in the refrigerator or freezer. The truffles should last up to 5 days in the refrigerator. You can prep a large batch and store in the freezer. It should last for a month minimum. I prefer storing mine in the freezer for a cookie dough ice cream type dessert.
