Cinnamon Roll Bread

Delicious Layers of Cinnamon Sugar 

There is nothing quite like walking through the mall and smelling Auntie Annes pretzels. That is exactly what this recipe will make your house smell like. The delicious combination of cinnamon and sugar.

Cinnamon roll are by far one of my favorite desserts. However, they usually take a good amount of time and effort to make. That is why I created this cinnamon roll bread.

To create the loaf, it takes maximum 15 minutes. Everything is thrown together in a bowl and comes together super quickly. This recipe also uses a lot of super simple ingredients. 

For the cinnamon sugar mixture, I left measurements as a guide. If you prefer yours to have more cinnamon and less sugar do that! You can adjust based on your liking.

The same goes for the glaze. Those measurements are a guide. If you prefer your glaze runnier or thicker just adjust accordingly. 

To keep this recipe refined sugar free, you would want to use coconut sugar. I used monk fruit and that worked just as well. Any granulated sugar will work.

Vegan butter: any vegan butter will work. If you aren’t vegan traditional butter also works. You could also use liquid oil.

Applesauce: I always use unsweetened applesauce. If you don’t want to use applesauce, you could use mashed banana, pumpkin, mashed sweet potato, or oil. I wouldn’t recommend substituting the applesauce though.

Almond flour: I haven’t tested any other flours.

Nondairy milk: I used unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan, traditional milk also works.

All-purpose flour: I haven’t tested any other flours. You could probably use a 1:1 gluten-free flour.

 Ingredients:

  • Vegan butter

  • Sugar 

  • Applesauce

  • Nondairy milk

  • Baking powder

  • All-purpose flour 

  • Almond flour

  • Cinnamon 

  • Powdered sugar

Recipe:

Loaf: 

  • 6 tablespoons vegan butter

  • 2/3 cup sugar

  • 1 cup applesauce

  • 1/2 cup nondairy milk

  • 2 teaspoons baking powder

  • 1 1/3 cup all-purpose flour

  • 2/3 cup almond flour

    Cinnamon Sugar Mixture:

  • 1/4 cup vegan butter

  • 2-3 tablespoons of cinnamon

  • 3-4 tablespoons of sugar 

  • 1-3 tablespoons all-purpose flour (enough to make the mixture a paste)

    Glaze: (measurements may vary)

  • ½ cup powdered sugar

  • About ¼ cup almond milk 

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit. Line a 9x5 baking pan with parchment paper or spray with cooking spray. Set aside.

2. In a bowl melt the 6 tablespoons of butter. Add in the sugar, applesauce, and nondairy milk. Stir well.

3. Add in the baking powder, all-purpose flour, and almond flour. Stir until a batter is formed. Set aside.

4. In a bowl melt the 1/4 cup of vegan butter. Add in the sugar, cinnamon, and flour. Stir until a paste is formed.

5. Pour half the batter into the baking pan. Add 2 tablespoons of the cinnamon sugar mixture on top and use a knife or toothpick to swirl around. Repeat with the rest of the batter and cinnamon sugar mixture.

6. Bake for 30-40 minutes or until a toothpick comes out clean.

7. To make the glaze combine the powdered sugar and nondairy milk. Once you reach the desired consistent pour on top of the COMPLETELY cooled bread.

Be sure to store the bread in an airtight container in the refrigerator. It should last up to one week. You can store it in the freezer to last longer.
