Why the Glaze?

I opted for a simple powdered sugar glaze, which adds just the right amount of sweetness and a smooth finish that complements the strawberry flavor beautifully. It’s a simple, no-fuss way to elevate the cookies without making them too heavy.
Of course, if you’re not a fan of glaze, you could easily switch it up and go for a vanilla frosting, or even a chocolate drizzle for a chocolate-covered strawberry vibe. The options are endless—experiment with what you love!
Chilling Is Worth It
One thing to keep in mind when making these cookies: they do need to chill in the refrigerator for at least 1 hour before baking. While it might seem like an extra step, it’s essential for achieving the perfect cookie texture. Chilling the dough helps prevent the cookies from spreading too much during baking, allowing them to keep their shape and ensuring that they stay soft and chewy on the inside.

You can even customize these cookies! If you're in the mood for a chocolate-covered strawberry vibe, feel free to toss in some chocolate chips or drizzle melted chocolate on top. You could also sprinkle some chopped nuts or coconut flakes for an added twist.
Vegan butter: any vegan butter will work. If you aren’t vegan normal butter should work as well.
Sugar: I used cane sugar in this recipe. Any granulated sugar will work. Keep in mind if you use a sugar like coconut sugar, the brown color will change the color of the cookies if you’re looking for that strawberry color.
Vanilla paste: I prefer this as compared to vanilla extract but either will work.
Nondairy milk: I used unsweetened almond milk. Any nondairy milk will work.
Strawberries: can use fresh or frozen. If you use frozen be sure to microwave them and mash until they are almost a liquid.
Flour: I haven’t tested any other flours in this recipe.
Powdered sugar: You can skip the glaze if you’d like or use any powdered sugar substitution. You can also use frosting.
Ingredients:
Vegan butter
Sugar
Vanilla paste
Nondairy milk
Strawberries
Baking powder
All-purpose flour
Powdered sugar
Recipe:
Makes about 6-8 cookies (depending on size you make them)
1/3 cup softened butter
1/3 cup sugar
1 teaspoon vanilla paste
4 tablespoons nondairy milk
1/3 cup strawberries (chopped + mashed)
1 teaspoon baking powder
1 cup flour
Directions:
In a bowl combine the butter, sugar, vanilla, and nondairy milk. Fold in the mashed up strawberries.
Add in the baking powder and flour. Stir until a dough like texture forms. Cover the dough and place in the refrigerator for at LEAST 1 hour. This step is super important as the cookies won’t turn out correctly unless the dough chills.
Once you are about to take the cookies out of the refrigerator, preheat the oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper and set aside.
Use a cookie scoop to scoop all the dough. Press the dough down slightly with your hands.
Bake for 10-15 minutes.
Once completely cooled top with glaze. About 1 cup powdered sugar to 3-4 tablespoons nondairy milk. Enjoy!
