Chocolate Peppermint Bars

Easy, No-Bake Treat

These chocolate peppermint bars have been my obsession this holiday season. They are so simple to make, everything is thrown into a bowl and ready within 10 minutes. Chocolate and peppermint is by far one of my favorite combinations so I am so excited to share these bars for anyone else who loves that combination!

 The texture of these is perfect and isn’t chalky from the protein powder. The protein powder is optional and can be replaced with any other flour, however, I like adding it so these bars keep me full!

TIP: when melting the chocolate add about ½ teaspoon of coconut oil. This helps the chocolate melt super smooth and makes it easier to work with.

Protein powder: I used a chocolate mint protein powder. You can use any flavor you want. If you don’t want to use protein powder, you could use coconut flour or more almond flour. The measurements will be DIFFERENT. Add slowly and mix as you go.

Almond butter: any nut butter will work. I would recommend sticking with almond butter, cashew butter, or sunflower seed butter.

Sugar: I used coconut sugar to keep this refined sugar free. You can use any granulated sugar of your choice (white, brown, stevia, etc.) Liquid sweetener such as maple syrup will NOT work.

Applesauce: I always use unsweetened applesauce. If you don’t want to use applesauce you could use pumpkin puree, mashed banana, or liquid oil. I wouldn’t recommend subsisting the applesauce though as these substitutions do make the recipe turn out slightly different.

Chocolate: I used vegan chocolate chips to add to the cookie dough. You can use any chocolate chips or chop a chocolate bar.

White chocolate: vegan white chocolate can be hard to find. I always buy mine on Amazon.

Cacao powder: if you don’t have this you can also use unsweetened cocoa powder.

Ingredients:

  • Almond butter

  • Applesauce

  • Sugar

  • Peppermint extract

  • Protein powder

  • Almond flour

  • Cacao powder

  • White chocolate

  • Dark chocolate

  • Optional: sprinkles or crushed candy canes

Recipe:

  • ½ cup almond butter

  • 1/3 cup applesauce

  • 1/3 cup sugar

  • ¼ teaspoon peppermint extract (or to your liking)

  • ½ cup protein powder

  • ½ cup almond flour

  • ¼ cup cacao powder

  • ½ cup dark chocolate

  • ½ cup white chocolate

Directions:

1.    Line a baking pan with parchment paper or spray with cooking spray.

2.    In a bowl combine the almond butter, applesauce, peppermint extract, and sugar.

3.    Add in the protein powder, almond flour, and cacao powder. Stir until a dough is formed. You can fold in extra chocolate chips here if you would like.

4.    Transfer the dough to the baking pan and place in the freezer for 30 minutes.

5.    After the 30 minutes melt both the dark chocolate and white chocolate. Add both on top. Optional: use a knife or toothpick to swirl the chocolate together. Top with sprinkles or crushed candy canes.

Be sure to store the bars in the refrigerator or freezer. The bars should last up to 5 days in the refrigerator. You can prep a large batch and store in the freezer. It should last for a month minimum. I prefer storing mine in the freezer for a cookie dough ice cream type dessert.
