Chocolate Peppermint Truffles

No-Bake Holiday Treat

These chocolate peppermint truffles have been a holiday staple. They require very few ingredients and always turn out delicious. This recipe is also very customizable as you can add in whatever you want and top with whatever you want. For example, you could add in peppermint extract to the mixture or add sprinkles to the mixture. You could also switch up the chocolate you use to coat the truffles.

If you want to add protein to this recipe, you could leave out some of the flour and add protein powder of your choice. I would recommend using either vanilla or chocolate.

This recipe is relatively low in sugar especially if you use sugar-free chocolate so, this could be a great snack option as well. The truffles are perfect to prep at the beginning of the week and have on hand as a quick and delicious snack or sweet treat.

Applesauce: I always use unsweetened applesauce. Ideally, you want the only ingredients to be water and apples. You can use sweetened applesauce; however, I find it to be sweet enough from the chocolate.

Sugar: I used coconut sugar to keep the recipe refined sugar free. However, any granulated sugar will work, for example, monk fruit or white sugar.

Almond flour: I haven’t tested any other flours in this recipe. I like using a mix of almond and coconut flour to keep the recipe grain and gluten-free.

Coconut flour: I haven’t tested any other flours in this recipe. I like using coconut flour to keep the recipe grain and gluten-free. You could use more almond flour in place of coconut flour. The measurements will be different.

Chocolate: any chocolate will work.

Candy canes: I like topping mine with crushed candy canes for the crunch and peppermint flavor. You could top the truffles with anything such as sprinkles.

Ingredients:

  • Applesauce

  • Sugar

  • Almond flour

  • Coconut flour

  • Chocolate

  • Candy canes

Recipe:

  • ½ cup applesauce

  • 1/3 cup sugar

  • 1 cup almond flour

  • 3 tablespoons coconut flour

  • 1 ½ cup chocolate

  • 4-6 crushed candy canes

Directions:

1.    In a bowl combine the applesauce and sugar. Add in the almond flour and coconut flour. Stir until a dough is formed.

2.    Use a cookie scoop to scoop the dough onto a plate or cookie sheet. Place in the refrigerator for 1 hour.

3.    After the hour, melt the chocolate. Coat each bite in the chocolate and top with the crushed candy cane.

4.    Place back in the refrigerator to allow the chocolate to harden.

 Be sure to store the truffles in the refrigerator in an airtight container. They should last up to one week. You can store them in the freezer to last longer.
